It’s never too early to have a BBQ!
With the weather starting to warm up, could it be time to have the first BBQ of the season?
Here are some yummy kebab variations which you could make to keep your BBQ guests happy.
How to make a kebab:
Chop your ingredients into similar-size pieces and prepare as the recipe (shown below) directs. If marinating, refrigerate 1 hour for fish and up to overnight for meat and poultry.
Preheat your grill whilst you thread your ingredients onto your skewers.
Place your kebabs under the grill and cook until ingredients are charred and cooked to your desired amount. This can vary from 5-15 minutes depending on which ingredients you decide to use.
Next you will need to pick your ingredients, here are some ideas of great combinations to help you decide…
1. The Steakhouse- Beef skewered with onion, mushroom and boiled potato. To make your beef, marinate in 3 tablespoons of olive oil, 1 tablespoon on soy, 1 tablespoon of Worcestershire, chopped parsley and thyme mixed with salt and pepper.
2. Bacon Kebabs- Cut bacon into pieces and fry. Skewer with beef chunks, onion, bell peppers and cherry tomato. Coat in BBQ and olive oil.
3. Pork and pineapple- Boil 1 cup water, 3 tablespoons each salt and brown sugar, 2 teaspoons pickling spices and 4 garlic cloves. Add 1 cup rum, then cool to baste your pork and pineapple with. Then grill.
4. Classic Lamb- Toss cubed lamb leg with 1 grated onion, 1/3 cup olive oil, and salt and pepper. Skewer with lemon slices, onion and bell pepper; grill.
5. Chicken Tikka Kebabs- 1 cup yogurt, 2 tablespoons garam masala, 1/2 cup chopped cilantro, 1 1/2 teaspoons each grated garlic and ginger, 1 tablespoon lime juice, and salt and cayenne. Skewer and grill. Serve with yogurt mixed with lime juice.
6. Haloumi- Marinate cubed haloumi cheese in 1/4 cup olive oil, 1/2 cup chopped parsley, 3 minced garlic cloves, and 2 teaspoons each cumin, coriander, paprika and dried mint. Skewer with scallion pieces and grill.
